MAKES 1 GLASS15 MINUTES + COOLINGOOLONG TEA
What you’ll need
- 1 oolong tea bag (or 2 g loose leaf)
- ¾ cup (180 ml) water, at the temperature on your tea package
- ½ ripe peach, washed, pitted, and sliced
- 1–2 teaspoons simple syrup, optional
- 1 teaspoon lemon juice
- ¾ cup ice
How to make it
- Brew the oolong according to its package directions. Remove the tea bag or strain the leaves, then cool and refrigerate.
- Set aside two peach slices. Gently muddle the remaining peach with the lemon juice in a glass. Add a teaspoon of syrup if the fruit needs it.
- Add ice and pour over the chilled tea. Stir from the bottom to lift the peach through the drink.
- Finish with the reserved slices. For a smoother drink, strain the muddled fruit before adding the ice.
Make it your own
A floral oolong gives a lighter result; a roasted oolong adds deeper toasted notes. Frozen peach slices work too: thaw them in the refrigerator before muddling.
Original recipe idea; not independently kitchen-tested. Chill the brewed tea promptly and add fresh fruit just before serving. Tea, fruit, and sweeteners vary—taste as you go.
